Vegan(ish) Recipe 2/52: Pumpkin Waffles

Pumpkin Wafles, dairy-free

1 1/2 cups Trader Joe’s Whole Wheat flour
3 teaspoons baking powder
1/2 teaspoon baking soda
2ish teaspoon of Trader Joe’s pumpkin spice
1 pinch salt

2 free rang eggs
1/4 cups of organic cane sugar
1 cup canned pumpkin
1 2/3 cups almond milk
4 tablespoons Earth Balance, melted and cooled

Step 1: Heat waffle iron

Step 2: Mix together flour, baking powder, baking soda, pumpkin spice, and salt

Step 3: Beat together eggs, sugar, pumpkin, almond milk, and Earth Balance

Step 4: Fold wet ingredients into the flour mix

Step 5: Cook waffle mix in your waffle iron

Step 6: Add desired toppings and enjoy!
