Vegan Recipe 11/53: Vegan Mac n’ Cheese
Tonight Kyle made this delicious meal. It was seriously amazing, I only wish we would have made a double batch so I could take more for lunch tomorrow! If you want to test it out follow the link. Peanut Butter Oatmeal Waffles + Vegan Peanut Butter Chocolate Chip cookies
Hello, Blogging World! It has been waaaay too long since my last post. I have been so busy with work and school. Ahhh…I am beginning to feel overwhelmed. But Spring Break is only 2.5 days of teaching away! Then it is off to Cabo to enjoy some much needed family time in the sun.
Check out the two maxi skirts I made in preparation for our Mexican vacation. I made the pink one first and vowed to never made anything again. I told Kyle + my mom to insist that I just buy a skirt next time rather than DIY it. Well two days after that comment I bought more fabric and made the aqua one. Haha, sometimes you never learn. But take two was much easier, I actually made a pattern for skirt #2. Now I have the pattern for future crafting adventures. Here is the blog I used to guide my sewing.
Since my last post I tried two new vegan recipes and they were both awesome! First I made some delicious Peanut Butter Oatmeal Waffles. The only thing I did different from the recipe was use Agave as the sweetener. The second treat I may was Vegan Peanut Butter Chocolate Chip Cookies. These were AMAZING!!!! If you want to give it a go here’s my adaptation of the recipe:
Vegan Peanut Butter Chocolate Chip Cookies
What you need:
- 1/3 cup natural peanut butter
- 2 Tablespoons unsweetened applesauce
- 1 cup of organic cane sugar
- 1/3 cup of almond milk
- 1 teaspoon vanilla
- 1 cup spelt flour
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 cup of rolled oats
- 1/2 cup or so of Trader Joe’s chocolate chips (vegan)
Step 1: Preheat oven to 425 degrees
Step 2: Mix the peanut butter, applesauce, sugar, almond milk and vanilla
Step 3: Mix spelt flour, baking soda and salt in a separate bowl
Step 4: Combine dry and wet mixtures and add oats and chocolate chips
Step 5: Spray coconut oil on a cookie sheet (or use parchment paper) and spoon cookie dough onto the baking sheet
Step 6: Bake for 8-10 minutes
Step 7: Once the cookies have cooled, enjoy your yummy treat!
P.S. I saw the Divergent movie today. I have already been greatly let down by this series because of the final book and the movie just made it worse. Time to forget this series ever happened and get back to my Mockingjay countdown…243 days to go.
Vegan Recipe 9/52: Dairy & Oil Free Waffles
I also used this Almond Buttermilk Recipe to make non-dairy buttermilk. I was pretty happy with the way these waffles turned out. The recipe made a huge amount so I froze the extras and ate waffles for breakfast all week:)
